Cabrales cheese is under its own DOP since 1981.
It has been produced in the "Concejo de Cabrales" and some other towns in the "Concejo de Peñamellera Alta", both in Asturias.
The milk that has been used is exclusively from cows, sheep and goats register in the DOP.
These animals roam freely in the Asturian mountains.
